Three ways to split
Ranges: type 1-3, 5 to get one PDF with pages 1, 2, 3 and 5. Every page: each page becomes its own PDF, delivered together as a ZIP.
Every N pages: a 30-page file split every 10 pages gives three PDFs (pages 1–10, 11–20 and 21–30).
Splitting doubles as deleting pages
To drop page 5 from a 10-page file, extract 1-4, 6-10. The original file isn't changed; you get a new PDF.
Pages keep their content as it is
Pages are copied rather than turned into images, so text that was selectable stays selectable.
Links or bookmarks that pointed to pages you left out won't have anywhere to go in the new file.

Questions
Does splitting make the file smaller?
Each part is usually smaller than the whole, but pages are not compressed.
Can I split by file size?
No. Split by pages; if a part is still too big, split it into smaller ranges.
Can I put the extracted pages in a different order?
Yes: Delete & Reorder PDF Pages lets you remove and move pages on thumbnails. You can also extract them as separate files and combine them in the order you want with Merge PDF.
Can I split a password-protected PDF?
If it only restricts copying or printing, yes. If it asks for a password when you open it, remove the password with Unlock PDF first.
